If there’s one thing I love, it’s easy party desserts and it doesn’t get much easier than a mini cheesecake recipe! In fact, it’s pretty much my go to recipe anytime I’m looking for fun desserts to make for a party!

You can never go wrong with traditional cheesecake but my absolute favorites are no bake cheesecakes. They’re just the right size and so simple that they can be made in minutes! I’ve made everything from mini Oreo cheesecakes to chocolate caramel cheesecake (and have more up my sleeve for next time!). They’re the perfect little desserts and are a crowd pleaser every time!

When it comes to easy desserts to make, it doesn’t get much better than a no bake dessert. Just switch out a couple ingredients and you can make anything from Oreo Cheesecake Bites to mouthwatering salted caramel dark chocolate cheesecake bites.

No Bake Cheesecake Bites

This no bake cheesecake is one of my favorite things to make because you only need a few ingredients. Start by combining room temperature cream cheese, sugar and vanilla extract in a large bowl.

Mix at medium speed with your stand mixer until smooth and creamy. I’m totally obsessed with my new Kitchenaid mixer. It’s SO much more convenient than the hand mixer that I used for years…don’t know why I took so long to make the switch!

In a separate bowl, whip heavy whipping cream until peaks form. Fold into cream cheese mixture.

A lot of people make a graham cracker crust for their cheesecake filling. It is pretty easy to make…just combine graham cracker crumbs with melted butter and sugar. However, I’m a huge fan of these fillo shells for all my quick, easy desserts!

Place the shells on a baking sheet and fill an icing bag with your creamy cheesecake mixture. Then just fill all the shells. You can bake them for a couple minutes first to make them more crispy but that’s totally optional. I only do it when I have extra time to spare but they taste great either way.

Finally, top with fruit. I like raspberries and blueberries but you can use any fruit you like. Strawberries and blackberries taste great too!

I love these bite size desserts for parties but who says you can’t treat yourself. Taste testing is a very important part of making party desserts so be sure you get a couple before all your guests beat you to it!

The red, white and blue make these the perfect little bites for Memorial Day and July 4th but these quick and easy desserts taste great any time of year.

The first batch I left as is but when I made these again recently, I added a little powdered sugar on top. They look even prettier, don’t you think?

I may just started sprinkling a little powdered sugar over all my desserts! It only takes an extra second and really adds a little something extra.

There are so many things you can do with these no bake cheesecake bites too! Add some mini chocolate chips, stir in white chocolate or add crumbled OREO cookies! You really can’t go wrong! Just remember, these go FAST so you may want to make a double batch!


Does cheesecake need to be refrigerated?

Yes, cheesecake should be refrigerated until ready to serve.

Can I make these these ahead of time?

The best part about this easy dessert is that you can make it ahead of time. Just store the cheesecake mixture in an airtight container. Then add it to the shells just before serving. Don’t add it to the shells too soon or they won’t be as crispy…I usually wait until an hour or two before.

Can you freeze cheesecake?

Yes, there are plenty of times where I’ll make the cheesecake mix ahead of time and freeze it until just before I need it. This is super helpful when I’m planning a party and I want to get as much done as possible ahead of time. Just take it out about an hour or so before you’ll need it and it should be thawed by the time you’re ready to use it.

How do you freeze cheesecake?

You can freeze the cheesecake mixture for later, just not in the shells (otherwise they won’t be crisp when you serve them). Put the cheesecake in a freezer bag and squeeze all the air out before sealing. For an extra layer of protection, place the freezer bag in an airtight container.

How long does cheesecake last?

Cheesecake will stay good in the freezer for up to a month, if wrapped correctly and stored in an airtight container. It will keep in the refrigerator for 3-4 days.

How long can these sit out?

Cheesecake shouldn’t sit out for more than about two hours (but don’t worry…these will be gone WAY before then!)

These no-bake cheesecake bites are such easy party desserts to make that they’ve become my go to desserts. Plus, there are so many easy ways to change them up…add a little chocolate, caramel, sprinkles or even edible chocolate chip cookie dough. The possibilities are endless! No Bake Cheesecake Bites

Need easy party desserts in a hurry? Whip up these delicious no bake cheesecake bites in a matter of minutes!


  • 3/4 cup heavy whipping cream
  • 8 oz cream cheese
  • 1/2 cup sugar
  • 1 1/2 tbsp vanilla extract
  • 30 mini-fillo shells
  • Raspberries and blueberries for garnish


  • Beat whipping cream until stiff peaks form; set aside
    3/4 cup heavy whipping cream
  • Mix cream cheese, sugar and vanilla until well blended
    8 oz cream cheese, 1/2 cup sugar, 1 1/2 tbsp vanilla extract
  • Fold in whipping cream
  • Use a decorating bag to fill 30 fillo shells with cream cheese mixture

  • Top with raspberries and blueberries

  • Refrigerate until ready to serve


If you want to make these ahead of time, make the cheesecake mixture and fill the piping bag, then store in the refrigerator until ready to serve. Just before serving, pipe into the fillo shells.

  2. So light, fluffy and tasty! Sweet but not TOO sweet. And I was able to whip these together in less than 20 minutes total, including chilling the beaters and bowl for the whipped cream and softening the cream cheese. Bet they’d be good with a tiny spoonful of preserves or cherry pie filling on top!

  5. These look tasty! Would whole milk in place of the heavy cream work? And maybe something else for the “crust” (the fillo shells)?

    1. Hi Nichole,
      You really need heavy cream for this recipe. Whole milk won’t work quite the same way.

      And yes, you can use a graham cracker crust if you prefer. You can find mini cheesecake pans on Amazon that work great for this. You will just end up with a different number of mini cheesecakes since you have to add more to the cheesecake tins to fill them. Enjoy!

    1. Hi! You can purchase them at your local grocery store or Walmart. They are usually in the freezer section near the puff pastries and frozen pie crusts.

      Thank you for checking. Yes, you are right, it’s a lot more vanilla than normal. The measurement is correct though. I’ve been making this recipe for years, long before I actually knew what I was doing. LOL I didn’t realize at the time that it was so much more than usual but everyone loves this dessert so much (and it’s one of the most popular recipes on my blog) that I just kept it that way. Feel free to add less but I’ve just kept the recipe the same since I get so many compliments on it. 🙂

    This recipe was so easy to make and absolutely delicious! I topped my cheesecakes with homemade blueberry sauce, and sprinkled powdered sugar on top, visually appealing. I also toasted the shells quickly before filling them (I let them cool down) which worked perfectly! I highly recommend for gatherings, holidays, or a cool summer treat!

    Thank you for sharing your recipe. It looks so good and delicious. May I add lemon juice? I want the cheesecake mixture has lemon flavour and yellow colour. Please advice and thank you.

    1. I have never tried adding lemon juice but what I would actually recommend, if you want a lemony flavor, is to add lemon extract. Add just a small amount to start (you can always add more) because a little goes a long way. For the yellow color, you may need to add a little yellow food coloring gel. Hope that helps! Enjoy!
