Brie Grilled Cheese With Prosciutto

This ooey gooey Brie Grilled Cheese recipe with prosciutto makes such an amazing lunch or dinner, you may never go back to eating regular grilled cheese sandwiches again!
You can never go wrong with a good grilled cheese sandwich. There’s something about that deliciously melted cheese that makes it one of our favorite comfort food recipes on a cozy night, for a quick lunch or even an easy sandwich for breakfast on the go!
Even though a couple of thick bread slices with cheddar or American cheese are always great, sometimes I like to change things up though and this time I decided to take things to the next level with a creamy brie grilled cheese on Thomas’ English muffins!
They’re a staple in our house because we can use them for everything from breakfast to dinner recipes. I knew they’d be so good stuffed with gooey brie, prosciutto, caramelized onions and even a little arugula.
What’s Needed to Make Amazing Brie and Prosciutto Sandwiches
- Thomas’ English Muffins
- Prosciutto cheese
- Brie wheel
- Onion, sliced
- Arugula
- Olive oil
How to Make Easy Brie Grilled Cheese with Prosciutto
Step 1. You’ll want to start by splitting two Thomas’ English Muffins with a fork. I was tempted to take a bite because the English muffins alone looked so good!
Step 2. Top 1/2 of each muffin with three slices of prosciutto.
Step 3. Add a thick slice of brie cheese. I like to slice a brie wheel to get a perfectly round shape for my sandwich. You can also slice the brie from the side and lay the brie slices over the top.
Step 4. Pour caramelized onions over the cheese.
Step 5. Top with the other half and cook until cheese is melted and both sides of the English muffins are golden brown.
Step 6. Stuff with arugula and serve hot!
You sure can! The best way for freezing Thomas English Muffins is pre-slice them with a fork, and wrap them with plastic wrap, then slip them into a freezer bag for up to 3 months.
If you are going to freeze them, it is best to do so within 2 weeks of opening the package.
What Spreads Go Best with English Muffin Brie Grilled Cheese?
I love that I can use Thomas’ English Muffins for so many things, from topping them with something simple for a snack to making fancy gourmet style sandwiches like these grilled cheese.
They are perfect just the way they are or simply served with a smear of sweet fig jam, apricot jam or a drizzle of honey. Though not a topping or spread, very thinly sliced Granny Smith apple between the cheese and the prosciutto is AH-mazing.
If you like a little bit more savory than sweet, you can use honey mustard or your favorite brown or tangy mustard.
What Do I Serve With Brie Grilled Cheese?
This delicious sandwich is a complete meal all on its own. Between the prosciutto (or you can use crispy bacon), the gooey cheese, the little bit of arugula and the amazing English muffins, this grilled brie sandwich is very filling and satisfying.
But for those times when you want a little something extra to serve with it, this is the perfect sandwich to serve with a hot bowl of this Potato Soup or tomato soup. Or for something a little bit lighter, brie sandwiches are great when paired with tart and sweet fruit. They are especially good with apple slices, peaches, figs and plums.
Serving these for girl’s night or a bunko party? These sandwiches, when paired with the tart flavor of your favorite kind of apple, are fantastic served the white wine or this White Wine Sangria!

Brie Grilled Cheese With Prosciutto
Equipment
Ingredients
- 2 Thomas’ English Muffins
- 6 slices prosciutto cheese 6 slices
- 1 Brie wheel
- 1 Medium onion, sliced
- 1/4 cup arugula
- 1 tsp olive oil
Instructions
- Split Thomas' English Muffins with a fork
- Top 1/2 of each Thomas' English Muffin with 3 slices prosciutto
- Cut two slices of brie lengthwise and add one to each sandwich
- In a saute pan, combine olive oil and sliced onion.
- Cook over medium high heat, stirring occasionally, until they turn a rich brown color
- Spoon onions over prosciutto and brie
- Top with the other half of the English muffin
- Cook sandwich until each side is a golden brown
- Stuff with arugula and enjoy!
Notes
- Be sure to split your English muffins with a fork to make the most of all the little nooks and crannies!
- These are perfect just the way they are or served with a smear of sweet fig jam, apricot jam or a drizzle of honey. Though not a topping or spread, very thinly sliced Granny Smith apple between the cheese and the prosciutto is delicious too!
