Easy Butterscotch Milkshake

Ever since my girls got into Harry Potter, we have been obsessed with all things butterscotch and this milkshake is basically the best thing to come out of that obsession! It’s smooth, creamy, and packed with that deep, buttery sweetness that butterscotch does so well.

What I love most about this one is how insanely easy it is. Just three ingredients, vanilla ice cream, whole milk, and butterscotch sauce, blended up in about 30 seconds. No fancy steps, no special skills needed. Just pour, blend, and enjoy.

We top ours off with a swirl of whipped cream, a drizzle of extra butterscotch sauce, and a sprinkle of butterscotch chips. It takes all of 10 seconds and makes it look like something straight from an ice cream shop!

Don’t let that extra butterscotch syrup go to waste! Make this easy butterbeer recipe, butterbeer/butterscotch poke cake, or these butterbeer pancakes. Have extra butterscotch chips? Whip up a batch of butterscotch and chocolate chip cookies.

Why We Love This Recipe

  • Only 3 Ingredients: Vanilla ice cream, whole milk, and butterscotch sauce are all you need. Even with garnishes, it’s only 5 ingredients. It doesn’t get much easier than that!
  • Ready In Minutes: One blender, 30 seconds, and you’re done. From start to finish, you can whip up this decadent milkshake in under 5 minutes.
  • Perfect For Any Occasion: Hot summer day, after school treat, backyard cookout…this milkshake fits right in everywhere!

Ingredients

Bowl of vanilla ice cream, a jug of whole milk, a bowl of butterscotch syrup, and scattered butterscotch chips on a white surface.
  • Vanilla Ice Cream Homestyle vanilla, vanilla bean, or French vanilla all work great here. Use whichever you have on hand!
  • Whole Milk Whole milk gives the milkshake the best creamy consistency. Almond milk also works if you prefer that.
  • Butterscotch Sauce This is where all that rich, buttery butterscotch flavor comes from! You can use store-bought sauce or syrup, but my homemade Butterscotch Sauce takes this milkshake to the next level!
  • Optional – Whipped cream and butterscotch chips for garnish

How To Make

Step 1. Add the vanilla ice cream, whole milk, and butterscotch sauce to your blender.

Step 2. Blend on high for 10 to 30 seconds, until everything is smooth and well combined. Be careful not to overblend. You want your milkshake thick and creamy, not thin!

Step 3. Pour into glasses and top with a swirl of whipped cream, a drizzle of butterscotch sauce, and a sprinkle of butterscotch chips. Enjoy right away!

Before pouring in the milkshake, I always drizzle a little butterscotch sauce around the inside of the glass. It looks so pretty and adds a little extra butterscotch flavor to every sip!

Variations & Add-ins

  • Change up the ice cream flavor: Try caramel or toffee ice cream instead of vanilla. It adds an even deeper butterscotch flavor.
  • Make it extra thick: Use ice cream straight from the freezer and reduce the milk slightly. The colder the ice cream, the thicker the shake!
  • Give it a salty twist: A small pinch of sea salt or a drizzle of salted caramel sauce on top tastes amazing combined with the sweet butterscotch flavors.
  • Try different garnishes: Crushed toffee bits, caramel sauce, or even a sprinkle of cinnamon all make delicious toppings.

Tips & Tricks

  • Don’t thaw your ice cream: I use it straight from the freezer so it’s just firm enough to scoop. Soft ice cream makes for a thin milkshake.
  • Don’t overblend: Blend just until everything is smooth, about 15 to 30 seconds. Overblending makes it too thin.
  • Taste before pouring: Give it a quick taste and don’t hold back on the butterscotch sauce if you want a little more flavor.

How Do I Make A Thicker Milkshake?

In addition to using the ice cream straight from the freezer, you can also reduce the amount of milk slightly. Start with less milk and add more only if needed.

How Much Does This Recipe Make?

This recipe makes about 3 cups, which is perfect for 2 regular servings or 1 extra large one!
