What is it about bite size desserts. Not only do they taste good but something about the fact that they’re bite size makes them even more fun to eat. If they includes chocolate, even better! From dark chocolate and salted caramel cheesecake bites to chocolate covered Oreos, they’re pretty much perfect for any occasion. 

One thing I hadn’t tried yet was fudge. For some reason, I’d always thought fudge must be complicated to make but I couldn’t have been more wrong! If I’d known it was this easy, I would have started making it forever ago!

Rocky Road Fudge 

Combine chocolate chips and sweetened condensed milk in a microwave safe bowl.

Microwave for one minute and stir. Continue to microwave in 10-20 second increments until chocolate is completely melted.

Keep heating in increments of 10-20 seconds if needed, until all chocolate is melted and smooth.

Stir in vanilla extract, then fold in marshmallows and almonds.

Mix well, until all pieces are covered.

Pour mixture into pan and refrigerate until it hardens. Cut into small squares and enjoy!

I may have to hide some away so that my family doesn’t eat it all! They’ll never have to know that I have a secret stash…and I’ll bet it tastes good with wine!

How long does it take fudge to set?

It takes about four hours until your fudge is ready to eat.

How do you store fudge?

Wrap fudge in plastic wrap and store in an airtight container. The more air that gets to it, the more crumbly it will become. You’ll also want to be sure to keep it away from sunlight or it’ll get mushy.

How long does fudge last?

If you store it correctly, fudge will stay good at room temperature for up to two weeks. If you keep it in the refrigerator, it will be good for three weeks.

Can fudge be frozen?

Yes, you can actually freeze fudge for up to three months. I’ve seen others say that you can save it for up to a year but after about three months, you risk freezer burn.

Just be sure to wrap the fudge well before you freeze it. Double wrap it in in plastic wrap, placing wax paper in between if you are stacking it. Place the wrapped fudge in a heavy duty freezer bag and place on the inside part of the freezer, not the door. When you’re ready to thaw it, you’ll get the best results if you thaw it in the refrigerator, rather than room temperature.

Fudge doesn't get much better than this delicious Rocky Road Fudge. What makes it even better is how easy it is to make!

  • Line a 9×9 pan with foil and grease inside of pan
  • Combine chocolate chips and condensed milk in a microwave safe bowl and microwave for one minute. Stir, then microwave in 10-20 second increments until chocolate is melted and smooth.
  • Stir in vanilla extract, then fold in marshmallows and almonds.
  • Pour mixture into pan and spread evenly with a spatula. Refrigerate until the fudge hardens.
  • Cut into small squares and enjoy!
