While I was there, I also picked up Curly’s® Pulled Pork and some slider buns. It’s not a tailgate without sliders and Smithfield sure does make it easy to create an awesome appetizer table!
I even came up with some great ideas for easy weeknight dinners! We love sheet pan meals and Eckrich Smoked Sausage is perfect for sheet pan sausage and peppers. We can use the Curly’s Pulled Pork to make sandwiches on those busy nights when we don’t have time to cook a full meal.
But for now, I focused on putting together the perfect spread for tailgating!

🛒 What’s Needed to Make Bacon Sausage Bites
For the bacon wrapped smoked sausages
- Eckrich® Smoked Sausage Links
- Smithfield® Bacon
- Garlic powder
- Honey
For the honey mustard sauce
- Honey
- Dijon mustard
- Mayonnaise
- Apple cider vinegar
📄 How to Make these Bacon Wrapped Sausages
Start with a preheated oven at 375 degrees
Step 1. In a small bowl, combine honey, Dijon mustard, mayonnaise and apple cider vinegar. Whisk until well combined, then set aside.
Step 2. Cut sausage into ½” slices. You should get about 16 slices from one sausage link (there are two links per package).
Step 3. Using a sharp knife, cut the bacon slices lengthwise down the middle. Then cut each of those pieces into thirds.
Step 4. Wrap each piece of sausage in a slice of bacon and secure with a toothpick.
Tip: Soak toothpicks in water for a few minutes first so that they don’t burn in the oven.
Step 5. Lay sausage slices on their sides and sprinkle with ½ the garlic powder. Turn sausage over and sprinkle with the remaining garlic powder.
Step 6. Brush the bacon with honey.
Step 7. Bake on a wire baking rack (with a cookie sheet or broiler pan underneath) for 15 minutes.
Tip: You can line the cookie sheet with aluminum foil or parchment paper to make clean up a cinch.
Step 9. Drizzle the bacon-wrapped pieces of sausage lightly with more honey (optional)
Step 10. Serve warm with honey mustard sauce on the side.
Bacon Wrapped Smoked Sausage Bite Variations
- Sausage: We used smoked pork sausage, but Eckrich® also makes kielbasa, smoked beef sausage, grillers, and little smokies. They also make a delicious turkey sausage that’s always a big hit.
- Sauce: These little sausage bites are served with a delicious homemade sweet and savory honey mustard sauce, but you can also serve them with barbecue sauce or even ranch dressing on the side as a dipping sauce. It you like a little bit of kick, add a few red pepper flakes to the honey mustard sauce.
- Bacon: I used Smithfield® Hometown Original flavor for this recipe but you can try this recipe with their Cherrywood or Applewood Bacon too.
Can I Make These Sausage Appetizers in Advance?
Sure! You can assemble them the day before you’re ready to bake them, then just brush them with honey and pop them in the oven before the big game starts! You can also make the honey mustard sauce in advance. Just store it in the fridge until you’re ready to serve.
Can I Save Leftovers?
In the unlikely event you have leftovers, don’t throw them out! They heat up really well. Just throw them back in the oven on 350 degrees until they have warmed all the way through, and each piece of bacon crisps up. You can also reheat them in the microwave for a bit, but the bacon may not crisp as well.
Can I Make These Sausages In The Air Fryer?
Cooking bacon wrapped smoked sausages in the air fryer is a good idea when you are making just a few. But when you’re feeding a crowd at a party or gathering it’s better if you cook them in the oven on a wire rack lined cookie sheet.
If you are making just a few and want to use the air fryer, just place the wrapped sausages with the end of the bacon facing down, in the air fryer basket. Cook at 380° F between 7-9 minutes or until the bacon is crisp. You will need to turn them over halfway through cooking to ensure the bacon gets evenly cooked.

Bacon Wrapped Sausage Bites
Equipment
Ingredients
- 2 tbsp dijon mustard
- 1/4 cup mayonnaise
- 1/4 cup honey separated
- 1/2 tsp apple cider vinegar
- 1 package Eckrich® Smoked Sausage 14 ounces
- 6 slices Smithfield® bacon
- 1 ½ tsp garlic powder
Instructions
- Preheat oven to 375 degrees
- Combine dijon mustard, mayonnaise, apple cider vinegar and half of the honey (2 tbsp) in a bowl and mix well. Set aside.2 tbsp dijon mustard, 1/4 cup mayonnaise, 1/2 tsp apple cider vinegar, 1/4 cup honey
- Cut sausage into ½” slices. You should end up with about 32 pieces.1 package Eckrich® Smoked Sausage
- Using a sharp knife, cut each piece of bacon lengthwise down the middle. Then cut each of those pieces into thirds.6 slices Smithfield® bacon
- Wrap sausage in bacon and secure with a toothpick.6 slices Smithfield® bacon
- Lay slices on their sides and sprinkle with ½ the garlic powder. Flip and sprinkle with the remaining garlic powder1 ½ tsp garlic powder
- Brush the bacon with honey.1/4 cup honey
- Bake on a wire baking rack (with a cookie sheet underneath) for 15 minutes.
- Drizzle lightly with more honey (optional)1/4 cup honey
