Looking for a fun cupcake treat? These Rainbow Surprise Cupcakes are great for birthdays, St. Patrick’s Day or just about any other special occasion you can think of!
I don’t know what came over me but I was really in the mood for some baking the other day. I looked in my pantry to see what I had stashed away and found some cake mix, icing and cereal. Normally you wouldn’t think of cereal when baking but I had just bought this treat corer and I was itching to test it out. Rainbow Surprise Cupcakes, here we come!

I’m not a Martha Stewart type so I make my cakes and cupcakes using mix from the box…it’s just easier that way! The first thing you’ll want to do is get your cake batter ready, either from the box or homemade…your choice! Then divide it equally among four bowls. Once that’s done, decide what four colors you want to use and add your food coloring. I chose pink, blue, purple and yellow.
Now it’s time to start making your layers. I went with the order of the rainbow and began with purple, then blue, yellow and finally pink. I used about 3/4 tablespoon per color.
Bake the cupcakes according the the directions, then let them cool completely. Now you’re ready for the surprise (except that you already know what it is)! Take your treat corer and make a hole in the middle of your cupcake. Stop just short of the bottom or all the goodies will fall out when the cupcake is picked up.
Now fill it with whatever colorful item you choose. You can use candy covered chocolate, colored mini marshmallows, jellybeans or anything else you’d like. I chose this cereal because I just happened to have it on hand.
Now you can frost your cupcake and add some sprinkles…doesn’t it look delish?
