How to Make Grinch Pancakes
Step 1. Start by placing your flour, baking powder, salt, and sugar in a large bowl. Whisk until all the dry ingredients are combined.
Step 2. Add milk, vanilla extract, melted butter, green food coloring and egg. I used about a 1/2 teaspoon neon green food coloring and a couple squirts of dark green, but you can make them any shade of green you’d like.
Step 3. Mix with a hand or stand mixer until the pancake batter is well combined.
Step 4. I love my pancake batter dispenser for less mess and perfectly round pancakes but you can also use a regular piping bag. Just pipe the batter onto a well greased skillet that’s heated over medium low. You can make them large or smaller for silver dollar pancakes.
Step 5. Cook the pancakes until the edges are cooked through and the bubbles on top begin to pop. Then quickly flip the pancakes and cook the other side. It takes a minute or less. The pancakes are done when they begin to brown slightly.
Step 6. If you’re adding icing, fill a piping bag with frosting and add a 1M tip. Piping icing between each pancake and a little on top. You could also top your pancakes with a drizzle of syrup or a dusting of powdered sugar, if you prefer!
Step 7. Finally, add heart sprinkles, then serve and enjoy!
Storage Instructions
- Fridge: You can store leftover pancakes in an airtight container for up to 3 days.
- Freezer: Freeze leftover cooked pancakes in a single layer, then stack them with parchment paper between each. Keep in a freezer bag for up to 2 months.
Top Tips for Delicious Pancakes
- For the brightest and best shade of green use neon green food gel. Start with a little and add a little at a time until you have the color you prefer.
- Keep your frying pan at medium-low heat so the pancakes cook evenly without browning too much.
- If you don’t have a pancake dispenser or piping bag, you can use a ladle or spoon instead.
- Let the batter rest for a couple of minutes after mixing. This short rest creates the best light and fluffy batter.
- Keep the pancakes warm as you make the rest by placing them on a sheet pan in a 200 degree oven.
Variations and Add-ins
- Flavor: Mix a teaspoon of peppermint extract into the batter for a holiday twist. You can also use almond extract instead of vanilla.
- Whipped cream: Top with green whipped cream instead of frosting for a lighter option.
- Colors: The green makes these perfect for Christmas but you can make this same recipe with different food coloring for other holidays.
- Heart-shaped pancakes: Use a heart-shaped mold to make the pancakes even more festive.
- Berries: Serve with a side of fresh strawberries or raspberries for a red and green Christmas combo. Perfect for a Grinch themed breakfast.
- Frosting: I used canned vanilla frosting, but you can use cream cheese icing or this homemade Stabilized Whipped Cream.
